Oxtail

Oxtail is the whole tail of a steer, typically cut into cross sections.  The meat surrounding the bone is especially rich and flavorful when slow-cooked or braised.  Being rich in gelatin, this produces an intensely flavorful broth.
Approx 1.5-2 lbs.
