The Full Story
Growing great, grass finished beef takes time, there is no getting around that! You can't rush quality and most things get better with age. Our Angus beef are between 2 and 3 years old and in prime condition by the time they are ready to fill bookings, which bear in mind, we must make a full year in advance with our butcher! This all takes a fair bit of planning and a bit of extra time is beneficial in making custom bulk orders work smoothly.
The benefits to a custom mixed quarter or side of beef far outweigh the wait! It is by far the most economical way to feed your family, giving you not only great value but also a choice in how you would like your beef. We will be able to go over cut instructions together to find the right selections for you. Some custom cut selections are available, which means that you can decide how you would like to personalize your order in terms of, roast size, steak thickness, preference for extra ground beef made into patties or sausages and so on. Not to fear though, if this is sounding confusing or a hassle, I am here to help with any questions you may have and you can also ask for common or standard options on some things you do not have a strong preference about.
HOW IT WORKS
We charge $8/lb. hanging weight for a side or mixed quarter of beef. Mixed quarters have less options for personalization as the other half of that side is a matching mixed quarter for another order, but some wiggle room is available. Hanging weight refers to the weight of a side of beef when it is starting the dry aging period. This dry aging period lasts from 10 - 14 days usually and ensures enhanced tenderness and taste for your final product. The hanging or dressed weight is approximately 300 lbs. per side or 150 lbs. per quarter. There will always be some variables but this is a pretty standard average size so that you can have an idea of the budget in assuming your price will be approx. $2400 for a side of beef and $1200 for a quarter. Once the dry age hanging process is over, a skilled butcher at Hilts Butcher Shop or Otonobee Meat Packers, will begin trimming and deboning the beef side into the cut selections chosen on the order form. Breaking down the primal cuts into your ordered cut selections will reduce the hanging weight to the final product by approx. 30%. This means that the final weight you receive from the butcher to take home and fill your freezer will be less than the dressed or hanging weight that was originally paid for. Before you receive your order, the cuts are all individually wrapped and labelled, neatly and meticulously and then flash frozen.
Another important note to take is that all butcher fees (cut and wrap) are covered in your cost stated above. All butcher fees are paid for by us, as we deal directly with our butcher on all matters and directly with our customers on all matters. You order from us and we order and pay/pickup from the butcher. Once notified it is ready, you pay/pickup from us. This is to cut out any chance of confusion or miscommunication, keeping things nice and simple and organized. If you opt for some upgraded selections, such as sausages, patties or vacuum sealing rather than butcher paper wrap for instance, then there will be an additional fee for those added options. These add-on options are all clearly stated on the order form so everything is very easily understood.
